Vada curry is a delicious Chennai style curry made from channa dal fritters(masal vadai) cooked with tomato, onion & coconut based gravy. Vada Curry recipe is very tempting in taste for breakfast and one of the best accompaniment for Idli, Dosa, Chapati, Puri & appam. Traditionally, this dish is made with left over deep-fried masala vadas.
Ingredients Vada Curry
For Masala Vada
Channa Dal – 1 cup
Green Chillies – 2 no’s
Garlic – 2 pods
Ginger – Small piece
Fennel seeds – 1/4 Tsp
Oil – For Frying
Curry leaves – 2 Sprigs
Coriander Leaves – 2 springs
Onion – 1/2 Chopped
Salt – To Taste

For Gravy
Cinnamon – 2 sticks
Cloves – 4 No’s
Cardamom – 3 No’s
Fennel seeds – 1/2 Tsp
Bay leaf – 1
Garlic – 4 pods
Onion – 1 1/2
Green Chillies – 4
Curry leaves – 2 Sprigs
Ginger – small piece
Tomatoes – 2
Turmeric powder – 1/4 Tsp
Chilli Powder – 1/2 Tbsp
Coriander powder- 1 Tbsp
Salt – To Taste
Coconut ( grind in to a paste ) – 3 Tbsp
Mint leaves – 5 to 6 Leaves
Coriander leaves – 1 Spring
